It is Sunday and what better than Pancakes and coffee?
Here is my family recipe for pancakes, I think every Swedish family has their own recipe. Swedish pancakes are sweater than Icelandic and thinner/crispier than American.
For 12 pancakes – You need:
3 eggs
6 dl milk
2 1/2 dl flour
1/2 tsp salt
150g melted butter (make sure it is not hot when mixing with the rest)
2 tsp vanilla sugar (not drops, available in bonus)
How to:
1. Whisk together the eggs with half of the milk.
2. Add the flour and whisk to a smooth mix. Beat in the remaining milk, salt and vanilla sugar.
3. Melt the butter and whisk into the mixture, make sure it is not hot, finger temp is good.
4. Heat the pan, add a tiny bit butter, pour a thin layer of the mix. When the surface solidified and become dull, it is time to turn the pancake, fry for another minute until it is golden brown.

Enjoy with ice-cream, cream, strawberry jam or sugar.
