This was our dinner tonight. Roasted sweet potato salad with a lot of good stuff, and I decided to served it with some nice beef and a very simple cold sauce. You could definitely have some fish or chicken with this instead of beef. It’s so easy to do and this is a perfect side dish for everything. :) Remember, I never cook too complicated food, I like it when it’s simple. ;)
YOU NEED:
2 large sweet potatoes (depends how many you cook for)
3 tablespoons olive oil
Spinach
200 g feta cheese
1 cup peeled roasted hazelnuts
4 spring onion, only the green end, chopped
½ small bunch fresch parsley, chopped
sea salt
black pepper
balsamic vinegar
DO THIS:
- Heat oven to 200C. Toss the sweet potato with the olive oil and some salt and pepper. Spread it on a baking tray and roast for about 30-35 min until tender.
- Roast the hazelnuts till they get a nice colour. Peel the nuts from the shell. I recommend to put them on a dry kitchen towel and scrub the nuts so they all get nicely peeled. Then coarsely chop the nuts.
- Put the spinach on a big platter, then add the roasted sweet potatoes, the chopped spring onion, feta cheese and hazelnuts. Drizzle some balsamic vinegar on top and season with sea salt/black pepper. Garnish with some parsley.
FOR THE BEEF:
When I cook beef I usually season it with salt and pepper and then let it stand in room temperature a bit before I cook it, so it wont be cold in the middle if you want the beef a bit rare.
Then I cook it in butter and olive oil, usually I put 1-2 garlic cloves in the butter/oil just for a nice taste but today I used an olive oil with garlic taste, and it tastes the same.
So fry the beefs 2-3 min on each side for medium rare on high temp. And pour the butter/oil mix on the meat during the frying.
COLD SAUCE:
For a simple cold sauce I just mixed creme fraiche, cream cheese with herb/garlic flavor, olive oil with lemon flavor and salt/pepper.
