EGG BENEDICTS AND AMERICAN PANCAKES

I love eating brunch, one of my favs to do on weekends, seriously. And this Sunday I just woke up and was craving to eat Egg Benedict and I wanted to try to do them myself. I have never done it before but I have eaten them a lot. So I started to search how to make them on youtube and found Gordon Ramsay’s video. Love him by the way. And thought “Easy, I can do this”. ;) So I went direct to the supermarket and told S to invite some friends to join us.

I didn’t do exactly the same as Gordon did with his Egg Benedict. I did my own version but on the video you can see how you make the sauce and how to make the eggs, that was the only thing I thought could be quite difficult. I’ve attached the video down below.

And for dessert (you just can’t eat brunch without something sweet) I made home made American Pancakes, so much nicer when you do them from scratch and not buy the mixture… Because it is so easy to make it yourself.


 

EGG BENEDICT

Poached eggs:

3 tablespoon vinegar
1,5-2 liter of water
4 eggs or as many you are doing for

  1. Boil plenty of water and vinegar in a saucepan.
  2. Then let simmer. Don’t let it boil!!!
  3. Break the eggs one at a time, first in a small bowl. Then spin the water around with a beater and pour carefully down the eggs in the water, one at the time. Let simmer for about three minutes.
  4. Pick up the eggs with a slotted spoon and put them on a paper tissue to let the water drain off.

Hollandaise sauce

200g melted butter
4 pcs egg yolks
3 tablespoons water
1-2 tbsp lemon juice
Salt
white pepper
cayenne pepper

  1. Melt the butter in the pan and let it cool for a while.
  2. Mix the egg yolks and water in a pot that you set in a water bath.
  3. Simmer until the sauce has thickened slightly. Beat all the time.
  4. Pour in the melted butter. little by little.
  5. Remove the pan from the heat and season with lemon, salt, white pepper and a little cayenne pepper.
  6. If the sauce is getting very thick you can pour some hot water to loosen it up. I did that before serving as I let the sauce stand for a little.

For serving I had:

Sliced sourdough bread, warm them in the oven before serving (not to long).
Add some butter and put the rest on top:

Mashed avocado with salt and pepper
Smoked salmon
Chopped grilled paprika (you can buy that in the supermarket)

On the other one I had:

Crispy parma ham (just heat a pan with olive oil and fry the parma ham until they get crispy. See Gordon’s video down below)

Then you add the poached egg, the sauce and some chopped chive.

I served this with some fried fries that I mixed with truffle oil, dry dill herb and salt. SO yummy!!

 

 


 

AMERICAN PANCAKES
Servings: 15 pieces

2 1/2 dl flour
2 teaspoons baking powder
2 tablespoons sugar
1 pinch of salt
2 1/2 dl milk (3%)
2 tablespoons melted butter
1 egg
butter for frying

  1. Mix the dry ingredients in bowl. Whisk first down milk, then butter and finally the egg. Beat until smooth.
  2. Add a little butter in a heated pan and then put about 1 tablespoon of batter per pancake. Don’t have the pan to hot!!
  3. Bake for about 1 1/2 minutes, or until it starts to get a little bubbles on the surface. Turn and bake for about 1 1/2 minutes. Sprinkle the freshly made pancakes with powdered sugar and serve with what you want. I had fresh blueberries with maple syrup.
