Okay, this was so delicious! Maybe more like a summer cake I would say, but why not light up these grey days with this delicious white chocolate cake with raspberries. I can guarantee you if you serve this cake to your guests they will love it.
YOU NEED:
For the cake:
200 g butter (+ extra for the cake form)
breadcrumbs
250 g white chocolate
4 eggs
2 1/2 dl sugar
2 1/2 dl flour
125g fresh raspberries
Raspberry Cream:
125g fresh raspberries
2 1/2 dl whipping cream
2 tablespoons powdered sugar
DO THIS:
- Preheat the oven to 175 degrees.
- Grease the form with butter and add breadcrumbs all around. The form should be about 24cm in diameter.
- Chocolate cake: Melt butter and chocolate in a saucepan over low heat.
- Stir in remaining ingredients except the raspberries.
- Pour the batter into the round shape form.
- Press the raspberries into the batter and bake in the middle of the oven for about 20- 25 minutes.
- The cake should be smudgy in the middle, let the cake cold a bit before serving. You can store it in the fridge for a little.
- Raspberry cream: Mash the raspberries in a bowl, whip the cream fluffy in another bowl and mix with the powdered sugar.
- Before serving add some powdered sugar all over the cake. Looks so much prettier. :)
