FRIED RICE WITH CHICKEN

I usually never cook Thai food, but sometimes I get my cravings and I miss my moms food a lot. I’m not as good as her, but I will be soon haha. I just need to do it more often, and it is actually my favorite food, real thai food, not ‘european thai food’ as I call it.

One of my favorite place to go here in Iceland if I’m craving for real thai food, is Noodle station. I just love it. Otherwise I haven’t found any good thai restaurants here yet, but I’m still looking!

And you can find all the soy sauces in a regular supermarket, but you also have one Thai supermarket near Hlemmur in town. :)

 

YOU NEED:
4 servings

3 cups jasmine rice (the best is to use ‘left over rice’, not newly boild rice)
500g of chicken filé
white pepper
3 tablespoon of oil (not olive oil)
1/2 onion
2 garlic cloves, chopped
3 tablespoons oyster sauce
2 tablespoon of mushroom soy sauce
2 teaspoon of fish soy sauce

Vegetables, you can choose what you want in your wok, and as you can see in my picture I had:
carrot
red paprika
1 red chilli
mushrooms
broccoli
snow peas
zucchini

4 large eggs
freshly squeezed lime juice
fresh coriander

DO THIS: 

  1. Cook jasmine rice according to directions on package and let the rice cool. (OR use ‘left over rice’)
  2. Cut the chicken and all the vegetable into pieces, including the onion.
  3. Heat a wok or frying pan with cooking oil.
  4. Fry the chicken, season it with white pepper and fry until it gets a nice colour.
  5. Add the garlic and the onion and fry everything together. (Be careful so you don’t burn the garlic)
  6. Pour the soy sauces into the pan and mix.
  7. Then add all the vegetables, remember to have high heat and stir constantly until the vegetables begin to soften a little but still retains some crispness. Push the vegetables a bit to the side and add the rice.
  8. Mix everything and make sure the pan is still really hot.
  9. Add the eggs, one at a time, mix it out properly in the rice. Taste and see if you need more soy sauce.
  10. Season with lime juice and garnish with fresh chopped coriander and roasted cashew nuts.
  11. Serve immediately with soy sauce or sweet chilli sauce.

    I tried it and everyone loved it! I’ve been wanting to make this for years but never found a recipe that I liked.. The only failure was I need a bigger WOK pan :)

      Oh so much fun to hear!! Please if u took any photos, send them to me by email or whatever :D Haha oh of course, you always need a big wok pan for thai food… Maybe should add it on the post! xx
