This is what I call vacation! Enjoying the nice weather and the food! We usually always go to one hotdog store in Öland, called Rosas handel. They are famous for their hotdogs and they also have very nice meat. :)

One thing on my ‘to do list’ in Öland was that I really wanted to eat Kroppkakor, as you can see from the pictures it’s Ölands national dish, very different but so good! You eat it with melted butter, cream and jam. I have actually done this dish at home once, long time ago, but I will definitely try it out again and put the recipe up here on the blog. :)

I did an amazing strawberry cake to my family the last day. I usually never bake so I was quite proud of myself because it turned out so good! I had 5 layers and between I had strawberry jam, strawberries and white chocolate mousse, and I decorated the cake with whipped cream, strawberries and white chocolate flakes. :)

      I had 5 layers of thin cake bottoms and on each layer I had strawberry jam, white chocolate mousse and then sliced strawberries.

      Here is the recipe of the mousse:

      2 egg yolks
      2 dl of cream
      Stir this together in a pot in low temp until it gets a little thicker. Then turn the heat off and add 250g of white chocolate until it melts. Let it cool.
      Whip 3 dl of cream with 1,5 tbs of sugar until thicken, but remember not to do it to thick… Then mix the chocolate cream gently with the whipped cream, use a spatula. Let it stay in the fridge meanwhile you preparing the cake. :)

      When you have put all the layers together, let the cake store in the fridge so everything really sticks together. Then cover the cake with whipped cream and use a cheese slicer on some white chocolate to get these nice flakes and just cover it around the cake.
