OUR BABYSHOWER FOR LINNEA

We had this beautiful babyshower for our Linnea this Sunday. It turned out perfect, as we wanted it to be! She deserve the best babyshower. <3

It was funny to plan all this and we really didn’t want Linnea to get suspicious at all and we succeeded! Linnea got so surprised!

Down below I will show you what we had on our food and cake table and the some recipes as well. :)

Pecan and caramel pie with whipped cream

Pie crusts:
3 dl flour
150 grams butter
0.5 tsp salt
0.5 dl sugar
2 tbsp water

Filling:
125 g butter
2 tbsp plain flour
3 dl light syrup
1 1/2 dl sugar
1/2 tsp salt
2 eggs
1 tsp vanilla
150 g of pecans, chopped

Do this:
1. Preheat the oven to 200 degrees
2. Boil butter, syrup, sugar, flour and salt in a saucepan. Let it simmer for a few minutes, stir all the time. Remove from the heat and let cool.
3. Mix together all the ingredients for the pie crust and press into a mold evenly. Use a fork to make some small holes in the middle of the pie crust. Bake for about 5-10 minutes!
4. Add the chopped pecans, vanilla sugar and lightly beaten eggs in the caramel mixture.
5. Pour the filling into the pie shell and bake for about 30-40 minutes at 175 degrees. If you notice that the edges start to get brown really quick you can use aluminum foil and just put it over the pie so it wont get burned.
6. Serve with some whipped cream and dust with some cacao powder.

I did these delicious “cake pops”, typical babyshower thing right. ;) but I didn’t use mashed cake like the original. I did chocolate balls and just covered it with melted chocolate and toppings. Chocolate balls is a big favorite in Sweden. No one doesn’t love Chocolate balls, and you can find it in every coffee shop in Sweden.

Chocolate balls “Choklad bollar”

YOU NEED: 

6 dl rolled oats
2 dl granulated sugar
1 tbsp vanilla sugar
4-5 tbsp cacao
200g butter, room temp
4 tbsp cold strong coffee

Dark chocolate
pops sticks
Toppings (I had coconut flakes, chopped hazelnuts and sprinkles)

1. Mix ALL ingredients in a bowl with your hands and let it chill a a little in the fridge before you shape the balls (10min).
2. Shape into balls and place on a plate.
3. Melt the chocolate over low heat in a water bath (in a bowl over boiling water).
4. Dip the top of the sticks into the melted chocolate and then press them into the ball. Then you’re guaranteed it will stick.
5. Then you need to let them chill in the fridge again, approx 20 min. The melted chocolate can just be heated a little bit again before you will dip and cover the chocolate balls.
6. One at a time, dip one ball and cover it with the melted chocolate and then add the chosen topping. Store them in the fridge. :)

I made two different kind of sandwiches. One with sallad, roast beef, potato sallad and roasted onion. On the other one I had mashed avocado and boiled egg, mayonnaise and some parsley as garnish on both. :)

I wanted first to have Mimosas for drinks. It’s champagne and orange juice, a typical brunch drink but it was very hard to find alcohol free champagne here in Iceland. Could just find strawberry “champagne” so I just skipped the orange juice. But it wasn’t that bad. :)

    Looks really nice!! I love the blue glass jug with the orange juice in it, reminds me of the dagg vase. Do you know where it is from?
