I COOKED this yummy fish dish (plaice) sometime last week.
Summer’s goal was to eat more fish and this was the first time I had some fish in my Swedish kitchen, pathetic!
But it was real good though as I made my own pesto to marinade the fish with parsley-garlic-olive oil-lime juice-koriander-spinach-spices(salt&pepper etc.)
I pan-fried the fish just a little, then I added mushrooms, fresh chili, carrots, paprika and onion to the pan.
Just before I roasted the fish in the oven I added rucola and poured the rest of the pesto on top.
VOILA..
It is never to late to start cooking/eating fish! In fact later today we’re gonna grill fish in Slottskogen.
I’m off to try out some different marinade and I was thinking about making tuna salad and potato salad on the side.
